Turkish Ice Cream is served a bit differently, and a lot more fun, than here in the US!
Turkish ice cream, known as Dondurma has a thick chewy texture and is resistant to melting, due to the thickening agents salep, a flour made from the root of the Early Purple Orchid.
Dondurma is usually sold from street vendor's carts or store fronts where the mixture is stirred regularly to keep it workable.
The customers are often teased by the vendors, by serving the ice cream cone on a stick, and then taking the ice cream away with the stick and rotating it around, before they finally give it to the customer. It's a FUN and DELICIOUS way to enjoy Turkish Ice Cream!
